Green Hummus – Not at all Irish


It’s always nice to find new things to turn green for St. Paddy’s day, don’t you think? Of course, make this anytime you’re feeling green. It’s packed full of yummy, healthy goodness. And green just happens to be my most favorite color.

Green Hummus

1 19oz can chickpeas, rinsed and drained
3-4 cloves garlic
3/4 cup loose spinach leaves
1 TBSP tahini or sesame seeds
3-4 TBSP lemon juice
2 TBSP olive oil (and a tad more to drizzle on top)
1/4 tsp cayenne pepper
Salt to taste

Throw everything in a blender and mix it up. Try to puree it long enough to render the chickpeas nice and smooth. I’ve been trying out Blendtec’s Twister Jar, and it’s a cinch to get smooth, creamy hummus in this small, sturdy, well-designed blender jar. I’ve used it also for peanut butter, which took all of 40 seconds to make.
